Black Bean and Beef Meatloaf

- 3/4 cup taco sauce, divided
- 1 & 1/2 lbs lean (93%) ground beef

- 1/4 teaspoon pepper
Directions
Heat oven to 350°F. Line 9×5-inch loaf pan with foil; spray foil with cooking spray. In food processor, process onion 5 seconds or until finely chopped. Add beans; cover. Pulse 5 or 6 times until finely chopped. Pour into large bowl. Add 1/2 cup of the taco sauce and all remaining ingredients; mix with hands until completely blended. Pat firmly into pan. Bake 1 hour. Spread remaining taco sauce over top. Bake 15 to 20 minutes longer or until interior temperature is at least 165°F. Remove from oven; let rest 20 minutes. Remove from pan by lifting with foil. Cut in slices.
Tip: Use the taco sauce with the degree of heat your family likes – mild, medium or hot.
