1 (10oz) can green enchilada sauce
1 (15oz) can Luck’s® Pinto Beans with Onions Seasoned with Pork, slightly drained
6 (8-inch) soft flour tortillas, heated as directed on package for easier rolling
3 green onions, thinly sliced
1 1/2 cups shredded Mexican cheese blend (6oz)
3 cups finely sliced lettuce
1 tomato, diced
1/3 cup sour cream


Heat oven to 350°F. Spray 11×7-inch baking dish with cooking spray. Spread about 1/4 cup of the enchilada sauce in the bottom of the dish. Pour beans into medium bowl. With fork, coarsely mash beans. Spread about 1/4 cup of the beans on bottom third of each tortilla. Top each with 1 tablespoon of the onions and about 2 tablespoons of the cheese. Start rolling from the bottom and fold in sides. Continue rolling. Place seam side down in baking dish. Pour remaining enchilada sauce over the enchiladas. Sprinkle with the remaining cheese. Spray a sheet of foil with cooking spray. Cover dish with foil, sprayed side down. Bake 30 to 35 minutes or until hot and bubbly. Serve with lettuce, tomato and sour cream.
