2 strips bacon, chopped
1/4 cup chopped onion
1/4 cup chopped celery
2 garlic cloves, minced
2 (15oz) cans Luck’s® Blackeye Peas Seasoned with Pork (do not drain)
1 (10oz) can mild or original diced tomatoes & green chilies (do not drain)
1 cup chicken broth
1 cup chopped smoked fully cooked ham
3 cups water
1 1/2 cups uncooked long grain white rice
In large saucepan, cook bacon 5 minutes, stirring occasionally. Stir in onion, celery and garlic. Cook 5 minutes or until bacon is crisp and vegetables are tender. Stir in black eyed peas, tomatoes & chilies, broth and ham. Bring to a boil. Reduce heat; simmer 15 minutes.
Meanwhile, cook rice in water as directed on package. Serve soup in bowls over rice.
