Ingredients

2 tablespoons vegetable oil
2 yellow summer squash, halved lengthwise, sliced
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh thyme
1 (14oz) can petite diced tomatoes
1 (20oz) can Luck’s® Southern Style Red Kidney Beans
1 (15oz) can Luck’s® Blackeye Peas (drained)
1 (12oz) package frozen okra or fresh sliced okra
1/4 cup chopped parsley

Preparation:

In large skillet or Dutch oven, heat oil over medium heat. Add squash, onion and bell pepper. Cook 10 minutes, stirring occasionally, until nearly tender. During last 3 minutes of cooking, stir in garlic and thyme. Stir in tomatoes, beans, black eye peas and okra. Cover; simmer 10 to 12 minutes or until thoroughly heated. Sprinkle with parsley.
