Ingredients

6 strips bacon, diced
2 stalks celery, diced
2 leeks (white and pale green parts only), halved lengthwise, sliced
2 carrots, diced
1/2 lb fresh green beans, cut in 1 inch pieces
2 cloves garlic, minced
1 bunch collard greens, ribs removed, chopped (about 4 cups packed)
1 quart chicken broth
1 (20oz) can Luck’s® Southern Style Pinto Beans
Hot sauce

Preparation:

In large saucepan or Dutch oven, cook bacon over medium heat 8 to 10 minutes or until slightly crisp. Add celery and leeks; cook and stir 5 minutes. Stir in carrots, green beans, garlic and collard greens; cook 5 minutes or until greens are slightly wilted. Stir in chicken broth; bring to a boil. Reduce heat; cover and simmer 45 minutes or until vegetables and greens are tender. Stir in pinto beans during last 10 minutes of cooking; heat thoroughly. Serve with hot sauce.
