Ingredients
- 1 lb lean ground beef (85%) or ground turkey
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 (15oz) Luck's® Mixed Beans (do not drain)
- 1 (10oz) can diced tomatoes & green chilies, undrained
- 1 cup frozen corn
- 1 cup barbecue sauce
- 1 tablespoon yellow mustard
- 2 teaspoons chili powder
- 1 (8.5oz) package corn bread mix, prepared according to package directions
- 1 jalapeño pepper, finely chopped

- 1 tablespoon yellow mustard

Directions
Preheat oven to 375°F. Spray a 13×9-inch baking dish with cooking spray. In a large skillet cook ground beef over medium high heat, breaking up chunks, until nearly cooked through. Add onion and green pepper and cook 2 to 3 minutes or until vegetables have softened. Add beans, tomatoes & green chilies, corn, barbecue sauce, mustard and chili powder. Pour tamale filling into prepared dish.
In a medium bowl stir together corn bread using package directions. Gently stir in jalapeño peppers. Dollop corn bread mixture over tamale filling. Bake for 30 to 35 minutes or until filling is bubbling and corn bread is cooked through.
