Blackeye Peas, Greens and Ham Soup
Ingredients
- 1 small onion, diced
- 2 celery stalks, diced
- 1 large carrot, diced
- 1 medium red bell pepper, diced
- 2 garlic cloves, minced
- 2 tablespoons vegetable oil
- 4 ounces baby spinach leaves, chopped
- 2 (15oz) cans Luck's® Blackeye Peas (do not drain)
- 1 quart low-sodium chicken broth
- 2 cups chopped cooked ham
- 2 teaspoons hot sauce
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon pepper

Ingredients

- 2 (15oz) cans Luck's® Blackeye Peas (do not drain)
- 1 quart low-sodium chicken broth
- 2 cups chopped cooked ham
- 2 teaspoons hot sauce
- 1/2 teaspoon dried thyme leaves
- 1/4 teaspoon pepper
Directions
In 4-quart saucepan or Dutch oven, cook onion, celery, carrot, bell pepper and garlic in oil over medium-high heat 7 to 8 minutes or until starting to soften, stirring frequently. Stir in spinach. Cook 2 minutes or until wilted. Stir in all remaining ingredients; bring to a boil. Reduce heat and simmer 15 minutes.
Tip: You can use your favorite greens – collard, kale, or Swiss chard would work well in this flavorful soup.
