- 1 cup uncooked long grain white rice
- 2 cups water
- 1 (15oz) can Luck's® Chili Beans (do not drain)
- 1 & 1/2 cups (6oz) shredded Cheddar, Monterey Jack or Cheddar Jack cheese

Ingredients
- 1 cup uncooked long grain white rice
- 2 cups water
- 1 (15oz) can Luck's® Chili Beans (do not drain)
- 1 & 1/2 cups (6oz) shredded Cheddar, Monterey Jack or Cheddar Jack cheese
Directions
Heat oven to 375°F. Spray 1 & 1/2-quart casserole with cooking spray. In medium saucepan, cook rice in water as directed on package. Stir in chili beans and 1 cup of the cheese. Spoon into casserole. Top with remaining cheese. Bake uncovered 20 to 25 minutes or until bubbly around edges and thoroughly heated.
Serving Suggestion: Serve this Tex Mex side dish with pulled pork tacos or your favorite Mexican entree.
