Ingredients

  • 2 tablespoons butter or margarine
  • 1 medium onion, chopped
  • 2 Roma tomatoes, cored and chopped
  • 1 (8oz) can tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons sugar
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup long grain white rice, rinsed
  • 1 cup reduced sodium chicken broth
  • 1 (15oz) Luck's® Pinto Beans with Pork (do not drain)

Ingredients

  • 1 ½ teaspoons sugar

  • ½ teaspoon ground black pepper
  • 1 cup long grain white rice, rinsed
  • 1 cup reduced sodium chicken broth
  • 1 (15oz) Luck's® Pinto Beans with Pork (do not drain)

Directions

Preheat oven to 350°F. In a large skillet heat butter over high heat. Add onion and tomatoes and cook for 3 to 5 minutes or until most of the liquid has evaporated. Add tomato sauce, Worcestershire sauce, garlic powder, sugar, salt and black pepper. Cook 2 to 3 minutes. Add rice and broth; reduce heat to medium and cook for 5 minutes.

Remove from heat and stir in beans. Pour rice into 2-quart casserole that has been sprayed with cooking spray. Cover casserole with foil. Bake for 35 to 40 minutes or until rice is tender, stirring once. Remove from oven and let rest 5 minutes. Lightly toss rice before serving.

Tip: Serve this side dish with kielbasa or your choice of protein.
