Ingredients
- 1 & 1/2 pounds boneless skinless chicken breasts, cubed
- 2 tablespoons smoked paprika
- 1 teaspoon salt
- 1 small onion, chopped (about 1/2 cup)
- 1 cup uncooked instant brown rice
- 1 (15oz) can Luck's® Pinto Beans (Fat Free) (drained, rinsed)
- 1 (15.25oz) can whole kernel corn (drained)
- 1 (10oz) can reduced sodium cream of chicken soup
- 1 cup milk
- 1 cup (4oz) shredded reduced fat Cheddar cheese

Directions
Spray 3 & 1/2 to 4 & 1/2-quart slow cooker with cooking spray. Mix chicken, paprika and salt in slow cooker. Stir in all remaining ingredients until well mixed; cover. Cook on Low heat setting 5 to 6 hours or until chicken is tender and thoroughly cooked.
Tips: Any milk will work for this recipe. Whole milk or even half-and-half will produce a creamier outcome.
