Ingredients
- 3 strips thick cut bacon, diced
- 1 medium onion, diced
- 1 small green bell pepper, diced
- 2 cups half-inch cubed peeled butternut squash, about 1lb
- 1/4 cup water
- 3 (15oz) cans Luck's® Pinto Beans with Pork (lightly drained)
- 1/2 cup ketchup
- 1/4 cup maple syrup
- 2 tablespoons apple cider vinegar
- 2 tablespoons tomato paste
- 1 tablespoon chopped fresh thyme

Directions
In heavy Dutch oven, cook bacon over medium heat 5 to 8 minutes or until crisp, stirring frequently. With slotted spoon, remove bacon to small bowl; set aside. Discard all but 2 tablespoons bacon drippings. Add onion and bell pepper to drippings. Cook 5 minutes or until starting to soften, stirring frequently. Push to edges of pan. Add squash. Cook 5 minutes or until squash starts to brown, stirring once or twice. Add water. Cover; cook 5 minutes or until squash is tender. Stir in all remaining ingredients. Simmer uncovered 8 to 10 minutes or until mixture is thick and thoroughly heated, stirring across bottom of pan to prevent sticking. Top with bacon.
