Ingredients

3 strips bacon, chopped
1 tablespoon vegetable oil
2 medium dark orange sweet potatoes, peeled, cut in 1/2-inch cubes
1/2 cup chopped onion
1 (15oz) can Luck’s® Black Beans (drained, rinsed)
2 cups lightly packed chopped kale leaves, ribs removed
1 cup chopped red bell pepper
1/2 cup apple juice or water
2 tablespoons honey
1 tablespoon hot sauce
2 teaspoons ground cumin

Preparation:

In large nonstick skillet, cook bacon and oil on medium-high heat 3 minutes or until bacon starts to crisp, stirring frequently. Add potatoes and onion. Cook 7 to 8 minutes or until slightly softened and browned, stirring frequently. Add all remaining ingredients. Cook and stir 2 minutes or until kale is wilted. Reduce heat to medium-low. Cover and cook 10 to 15 minutes or until all vegetables are tender, stirring 2 or 3 times.
