Ingredients

  • 2 large carrots, peeled, thinly sliced
  • 2 celery stalks, thinly sliced
  • 1/2 large onion, diced
  • 1 large garlic clove, minced
  • 6 tablespoons extra virgin olive oil, divided
  • 1 cup vegetable or chicken stock
  • 1/2 teaspoon dried Greek oregano
  • 1 bay leaf
  • 1 tablespoon grated orange peel
  • 1/4 cup orange juice
  • 2 (15oz) cans Luck's® Great Northern Beans (do not drain)
  • 1 tablespoon chopped fresh parsley

Ingredients

  • 2 large carrots, peeled, thinly sliced

  • 1/4 cup orange juice
  • 2 (15oz) cans Luck's® Great Northern Beans (do not drain)
  • 1 tablespoon chopped fresh parsley

Directions

In large skillet or Dutch oven, cook carrots, celery, onion and garlic in 2 tablespoons of the olive oil over medium heat for 5 minutes, stirring frequently. Stir in stock, oregano, bay leaf, orange peel and orange juice. Cover; simmer 8 to 10 minutes or until vegetables are tender. Stir in beans. Cook 5 minutes or until thoroughly heated. To serve, spoon into bowls and drizzle each serving with remaining olive oil; sprinkle with parsley.
