Thai-Mex Pumpkin Black Bean Soup
Ingredients
- 1 medium onion, diced
- 1 tablespoon vegetable oil
- 2 cloves garlic, grated or finely minced
- 1 tablespoon grated fresh ginger (or finely mince)
- 1 tablespoon curry powder
- 1 chipotle chili, seeds removed, finely chopped (from 7.5oz can)
- 1 tablespoon adobo sauce (from 7.5oz can)
- 1 & 1/2 cups vegetable broth
- 1 small sweet potato, peeled, cut in ½-inch cubes
- 1 (13.66oz) can unsweetened coconut milk
- 1 (15oz) can pumpkin puree (not pumpkin pie filling)
- 2 (15oz) cans Luck's® Black Beans (drained, rinsed)
- 1/2 to 1 teaspoon salt
- Toppings:
- 1/2 cup julienne-cut radishes
- 1/2 cup loosely packed chopped fresh cilantro
- 1 lime, cut in wedges

- 1 tablespoon adobo sauce (from 7.5oz can)

Directions
In large saucepan or Dutch oven, cook onion in oil over medium heat 5 minutes, stirring occasionally. Stir in garlic and ginger; cook and stir 1 minute. Stir in curry powder, chipotle chili and adobo sauce; cook and stir 30 seconds. Stir in broth and sweet potato. Cover; simmer 5 to 8 minutes or until sweet potato is tender. Stir in coconut milk and pumpkin. Simmer uncovered 5 minutes, stirring occasionally. Stir in black beans and cook until heated. Season with salt to taste. Top each serving with radishes, cilantro and lime wedges to squeeze over soup.
Tips: You can substitute lite coconut milk; the consistency will be a little thinner. For less heat, reduce the amount of chipotle chili and adobo sauce.
